Blueberry White Chocolate Bread Pudding with Amaretto Cream Sauce - HBinFive

I am sticky.

I am sticky because it is humid.  It is so humid that my stress fractures hurt and, if I weren't already committed to becoming a food network starPhysician.  Research scientist.  (Sigh.)

I could seriously give Mr. G a run for his money.

I am sticky because I really enjoy doing things that involve turning the oven on in ninety degree weather.

So my oven is on.  In ninety degree weather.  Constantly.

I am sticky because I just licked my way through a batch of bread pudding batter.

Because if you're going to be sticky anyway, you might as well get your hands really full of bread pudding batter.  And then spend the afternoon taste testing the aforementioned batch of bread pudding batter.  For quality control purposes.

You wouldn't want to poison your father on Father's Day. After all.

Blueberry White Chocolate Bread Pudding with Amaretto Cream Sauce
Serves 8-10 (more.  Way more.), adapted from Emeril Lagasse

4 large eggs
2 cups heavy cream
2 cups almond milk
1 cup packed light brown sugar
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/2 loaf of homemade mixed berry bread from Healthy Bread in Five Minutes a day plus ten muffins made with the mixed berry bread dough (i.e. 6 cups 1/2-inch cubed day old bread).  Yeah.  I made bread just to put it in bread pudding.  I'm a rock star.
6 oz white chocolate chunks
2 cups fresh blueberries
1 tbsp cornstarch
1/4 cup amaretto
2 cups heavy cream
1/4 cup granulated sugar

1. Mix together 2 cups heavy cream, 2 cups almond milk, brown sugar, vanilla, cinnamon, chocolate, blueberries, and bread.  Let sit in the fridge overnight or, if you're in a rush, for at least 30 minutes.

2. Preheat the oven to 350.  Butter a 9x13 inch baking pan or a 9-inch cake pan plus 1 ramekin.  The ramekin being solely for picture taking purposes.  The 9-inch cake pan being because you can't seem to locate your 9x13-inch baking pan.  It's a strange world in which we live.

3. Pour the bread/egg mixture into the prepared pan.  Bake until firm when pressed in the center, about 1 hour for the 9x13-inch pan, 1 hour and 20 minutes for the 9-inch cake pan, and 40 minutes for the ramekin.  Let cool on a wire rack.

4. For the cream sauce: In a small bowl, dissolve the cornstarch in the amaretto.  Scald the cream over medium high heat.  Add in amaretto slurry, whisking constantly, and bring to a boil.  Reduce the heat and simmer for 30 seconds.  Remove from the heat and add the sugar.  Whisk until dissolved.  Let cool to room temperature.

5.  Serve warm or cold.

  3. Amazing, Joanne. That is some combo of ingredients in your bread pudding. Nothing missing. Fruit, chocolate, cream, sugar and booze. (And I'd probably top it all off with more cream...)

  4. Ugghh, I know what you mean about the oven in 90 degree weather! We are suppose to get to 105 today, yea, summer solstice! Anything with blueberries and cream is right up my alley, I love the picture with the blueberries in descending order, very pretty : )

  7. I wanted to absolutely die yesterday when my oven was only for all of 35 minutes. And I still had dinner to make. Luckily my mini convection (electric) oven came into play and saved the day. Even if didn't have it, I would have cared the heat for this dessert. It looks irresistable.

  14. Sorry it is so hot where you are! Come visit me in L.A. where it's been overcast and chilly for the last 2 weeks. Go figure!

    My oven rarely goes on in the winter, nevermind the summer. You are certainly a dedicated cook and this recipe is no exception! Looks delicious.

  22. I can't handle how amazing this looks, Joanne! I love bread pudding... just had some the other night, actually. What I enjoy the most about it are the various consistencies. You have the crusty outside, the chewy inside, the smooth creamy sauce on top. Just makes me so happy!

    I love bread pudding with berries in it. Tyler had a recipe that was similar and I think I ate the whole pan of it on my own. That amaretto sauce looks and sounds amazing. I could practically drink it up!

  44. I'm not positive how this qualifies as a healthy bread but I am going to ignore that due to the tastiness-looking factor. Me wants some. Now. You can give some of your leftover "way more than 8-10 servings" to me.

    In terms of the stickiness. Unbearable. I do not like it. At all. Except that it forces me to do something besides running once in a while...

    I ran into an 80 year old lady in my apartment that was complaining she hates this weather because she can't do anything, she can't eat or sleep. It dawned on me that if someone who has been in NYC all their life can't get used to it, I'm probably never going to either. You're welcome to come cook in my central air conditioned apartment someday. It might be fun! :-)

  46. Oh my goodness. I JUST posted a blueberry and white chocolate cupcake recipe (that also had mint). It's so ironic that you're posting something similar (although completely different). This bread pudding sounds delicious though. The stickier the better for bread pudding, I say. But it's been unnecessarily sticky outside recently. I thoroughly appreciate my air conditioning during such times.

  60. We suffer from the same oven/sticky problem, though maybe you are stickier in NY than we are in AZ...

    Can't wait to see what you do with the coconut oil. I am rather more a stay-within-the-box type of cook. I would caution you (from experience) to remember the oil solidifies below 76 degrees....it was a bit awkward in a marinade. Yeah, you can picture it, can't you!

  66. I'm sticky too, Joanne! And I wish I was a physician like you will soon be. You know, I went to Emory in Atlanta, and my Mom begged me to study medicine. I wish I listened (sigh). Anyway, you have half the battle already!
    And you know, I sent my photo and info to Food Network, and they asked me to drive to Miami for some tryouts for a show. I chickened out and didn't do it, but maybe you could once your'e done with school! Maybe I could too, since I'm more brave now (smile)!
    I love this bread puddings flavors by the way-sounds so good...

And I would totally be willing to bake bread to make into bread pudding. I baked a cake just to see if I could then make it into a consommé because I was possessed by the concept of creating pure cake essence, as bizarre as that may be.
