Kerala-Style Edamame Curry...Eat.Live.Be. for a Better 2011!

I wish that all of you could see my room.

It's in so much disarray that you would faint and then never speak to me again.

You see.  I know I come across as kind of organized.  I post three days a week.  Like clockwork.  (Better than the United States Postal Service, which occasionally is late and occasionally also bangs up your packages enough that they are unrecognizable.  I may be messy.  But a vandal, I am not.  I swear it.) 

And I'm usually at least 90% prepared for our exams.  Sometimes.  Except for twice when I was really not prepared.  But do the heart and kidney really matter in the scheme of things?  Don't you just love existentialism this early in the morning!

But that's at the expense of my bedroom floor.

It's just that sometimes at night, my clothes don't feel like making it into my hamper.  Sometimes they really want to sleep on the floor.  And I'm usually too tired to argue with them.

And then on Saturdays I really mean to clean them up.  But then I run 17 miles.  And decide not to move for the rest of the day.  It happens.

And don't let me forget about the cookbooks that I sleep next to.  And the food magazines.  They're my significant other inspiration.  I can just reach over before I go to bed and page through them and get all excited about all the wonderful things I can cook.  It really is a warm and loving relationship.

This week at Eat.Live.Be. we are talking about what books, cookbooks, and resources help us with our healthy goals.  Some of my favorite places to go when I'm looking for inspiration are my vegan/vegetarian cookbooks and Vegetarian Times, which is a food magazine that I subscribe to (and which the recipe for this curry is from!).  Now I don't really mean to say that meat is not healthy and eating vegan/vegetarian always is.  Not true in any way.  I just like that vegan and vegetarian recipes typically call for a lot of vegetables. And lots of whole foods.  And, really, I can always add meat if I want to.  So I end up getting the best of both worlds.

I've gotten Vegetarian Times in the mail for at least five months now and this is the first thing I've ever made from it.  Every month I page through it and want to make everything.  But then Michael Symon usually comes along and takes over my life and weekends and occludes my mind.  God, he is so demanding.

But this week I said, "ENOUGH!"  I closed my eyes, opened the latest issue to a random page, and pointed.  Ending up with this curry.  That had butternut squash in it.  The fates were smiling down on me.  This much I know for sure.

So what did I do to it?  Well I had to change it around a little bit, you see.  I upped the butternut squash because the only one I could find was humongous and I wasn't about to only use the 4 cups that the recipe suggested.  No, no, no.  That would be shameful.  So then I also upped some of the spices and added more coconut milk and voila.  Here we are.  This curry has a light hint of sweetness from the anise (or fennel.  If you are so lucky to have fennel seeds in your spice cabinet. I thought I did.  But apparently I don't.) and coconut milk and butternut squash.  Add in a little bit of sriracha or hot sauce.  And your mouth will be so happy with the play on sweet and spicy that you might feel compelled to subscribe to Vegetarian Times and then sleep with it under your pillow.

Not that I do things like that.  I just sleep next to it.  Big difference.

Kerala-Style Edamame Curry
Serves 5-6, adapted from Vegetarian Times

1 tbsp anise seeds or fennel seeds
1 tbsp brown mustard seeds
2 tsp cumin seeds
2 tsp olive oil
1 large onion, half chopped, half sliced, divided
4 cups low sodium-vegetable broth
1 can light coconut milk
1 large butternut squash, seeded and diced (about 4 lb)
1 medium head cauliflower, cut into bite-sized pieces
2 tbsp minced fresh ginger
1 tsp ground turmeric
1 tsp coarse salt
2 cups frozen shelled edamame
sriracha, to taste
6 tbsp unsweetened flaked or shredded coconut
1/2 cup chopped cilantro

1. Heat anise/fennel, mustard, and cumin seeds in a dry skillet over medium-low heat.  Cover and cook 2 minutes or until mustard seeds begin to pop, shaking the pan occasionally.  Turn off heat and keep skillet covered until popping subsides.

2. Heat 1 tsp oil in large saucepan over medium heat.  Add chopped onion and saute 6 minutes.  Add 1 cup broth, stirring the bottom of the saucepan to lift off any brown bits, then add remaining 3 cups broth and coconut milk.  Stir in squash, cauliflower, ginger, turmeric, salt and toasted spices.  Bring mixture to a boil.  Reduce heat to low and simmer, uncovered, 25 minutes.  Add edamame and cook 10 minutes more.  Add sriracha/hot sauce and salt to taste.

3. Meanwhile, toast coconut in a small skillet over medium heat for 3-4 minutes or until browned and fragrant.  Set aside.

4. Heat remaining 1 tsp oil in medium skillet over medium heat.  Add sliced onion.  Saute 12 minutes or until golden.

5. To serve, spoon into 6 bowls and garnish each serving with golden onion slices, toasted coconut and cilantro.

How interesting that you turn to veg cookbooks and mags for inspiration - I agree that the recipes full of vegetables are the best - though I can get a bit narky about vegetarian recipes without protein because the longer I have been vegetarian, the more I appreciate my protein but like you with your meat I often add some protein.

    And I love to hear about your messy room - my place is the same - my mother frowns on it but I figure my priorities aren't that bad - enjoying blogging and food and let a bit of mess into my life - though it would help if I just did a few dishes now instead of blogging - sigh!

  7. Closing your eyes and pointing a finger is a technique I think I will adopt. There are just too many choices for good recipes out there from all our sources! This was a good choice Joannne.

  8. I actually have all these ingredients! That curry looks perfect and looks like a really nice balance oud flavors. Ps... My bedroom floor is similar. Although it's my clothes that are washed and just need to be hung up that are on my floor next to the tons of cook book and magazines. Ha!! Congrats on 17!

  13. My room was a disaster too, until yesterday when after a week of not being able to find the DVD player remote I decided to clean. I am, however, happy to say that I keep a clean kitchen. And yesterday I finally put the cookbooks beside my bed back up on the shelves in the dining room. Then I settled into bed with Isa Chadra Moskowitz' "Vegan With A Vengeance". As you know, I am not vegan but I too like the abundance of vegetables and innovation in vegetarian/vegan recipes.

    Oh, and I almost forgot to say... this looks like my dream dish. Coconut milk & butternut squash, heck yes.

  15. I keep thinking I should put a hamper near my bed so that the day's discards can go into it then I tell myself no, that'll crowd the room and I won't be motivated to pick up after myself. I do pick up after myself but very grudgingly.

  33. I regard clothes on the floor as an artistic expression of my self and how the day went ;) And who would mess with art? Certainly not me :P

    I'm not sure this would count for the "Eat.Live.Be," BUT, I'm reading this wonderful book: "The Omnivore's Dilemma." I really like it. I already knew many of the things in it, but now I'm even more aware of it and definitely makes me want to buy _grass-fed_ beef only... I think that's definitely something which would make all of us healthier.

    And lastly: your curry looks really tasty :) much nicer than most curries you get to see out there!

    Really i get all excited at night too , reading all the stuff , and then get lost reading it all into wee morning hours and then m too sleepy when its time to wake up early and cook that :-)

    the curry looks really heartily flavorfully a tongue tickler ,in a delicious way.

  40. Hah! Totally know what you mean about the clothes on the floor - most of the time I can't even see our bedroom carpet. It's disgusting. This butternut curry though - totally the opposite of that. Love the spices and coconut milk - perfect use for the two butternuts lolling around in my vegetable basket.

Alas. :-) Instead I talked for hours with people I love to bits and watched TV and listened to old time radio and ate lots of grainy bread dipped in olive oil. I think it was worth it. :-)

I am laughing so hard about your room confession, you see, my daughter is a wonderfully together girl and doing so well in school and work and with her art, but her room is a sea of discord.I used to get upset about it and now I dont even care. We all have something we let slide, like it is a treat really. Do not let it get you down! As for books and magazines to keep me on track, I have to plead a bit of an opposite from you. I used to buy everything under the sun and it only cluttered my life. Now I eat intuitively and get inspiration from all of you (and bittman of course!).     Although I do have stacks of cookbooks and food magazines I keep them mostly in what I call my "hoarder room" the guest bedroom that is pretty scary right now. ;-) I think I marked this to make in VT--it's a favorite magazine resource of mine as are the countless vegan/vegetarian cookbooks I have which most of my friends / family don't get because as they proclaim "You eat meat!" I'm like you--I take more inspiration from the veggie cookbooks. ;-)

  47. Hey Joanne, That described me to a T as well.. slightly messy apartment (until my mom takes pity on me and gives me a hand) because my priorities are in the kitchen and work/school. But I have my favourite cookbooks by my bedside table for weekly inspiration... although sometimes I find it a bit stressful (so much I want to make!) so I've started to read other pleasure books right before bedtime.

I have always loved curry ever since I studied in England where I was also a vegetarian at the time. This reminds me of one of my favorite meals I got from the local Indian place down the street from our dorms. I will have to make this one for sure!

  70. Your post looks like it should be a spread from Gourmet magazine. Do you get a lot of natural light in your kitchen or do you use a photo light? The dish looks so full of healthful, amazing flavors. In college the only way I could get into my bed was to take my arm and swoop all the books and papers to the foot. Then I would crawl in.

    Also...you run 17 miles?! In a day?! Omg...that is absolute torture. I can barely run 2.5 miles on the treadmill hahah! You must have some awesome will power.

  73. I have cookbooks and magazines everywhere as well. By the sofa, under the bed, in the bed, in the kitchen...pretty much everywhere except for in the bookshelves.

    As for this curry, it looks fantastic and flavorful. Plus, I love that it calls for edamame, which is something that I can't get enough of. A good looking dish for sure.

  99. LOL I don't think people think I'm that organized to be honest, but I can totally relate to a state of messiness in my bedroom. And I have so many cookbooks piled up in this apartment they're practically spilling out the front door. I'd never have fantasized that edamame could be added to curry but now I must try it.   101. I just made this for dinner. It is so freaking good. didn't have cumin seeds so I just added ground cumin when adding all the veggies/stock.
