Brian has tried to convince me for years that mahimahi is dolphin. As in Flipper. And so I've never had the guts to try it even though I know he is lying! Although I think this preparation might be totally worth it!!!!!
Are you aware that there is a picture of meat on your blog? Just makin' sure. LOL, just teasin', I know you said you weren't going to say you were going veg permanently, but I was surprised anyway! This look so beautiful with all that color going on--fabulous pics (and writing) as always!
I LOVE fruit-salsa so much. I'm not sure I would have said that five years ago. The nice thing about this recipe is no hangover the next day. Unless I also have the piña colada. ;)

I just saw Marcus for the first time the other day (on TV, not in person :) and he was making mac 'n' cheese with rice milk. Not sure how I feel about that... but you're a fan so I'm a fan :) I must try this fish- one of my favorite ways to make it!

The only thing that would make this meal even better to me is to be sitting beach-front eating it! But I'll settle for the Ohio River if I have to =)
