Alice Waters's Summer Squash and Corn Pasta

Summer isn't even official yet and I've already succumbed to the wily ways of the summer squash.

In short.  I'm doomed.

It's just that when you see them at the Farmer's market, all cute and pattypan-like (and pattypan makes you think of pattycakes which makes you think of babies and nursery rhymes and the fact that you are not yet betrothed or anywhere close to it and then you have to buy them because you may not have a child but you can have cute little summer squash right at your fingertips and that is kind of the same thing, no?) and lined up in a row.  You are just so damn depressed excited that you just have to buy all five. 

They are harbingers of good things to come.  You can feel it.

Maybe summer.  Maybe the man of your dreams.  Maybe (e) all of the above.

So you get home with these little squash that all but jumped stem-first into your cloth eco-friendly recyclable shopping bag.

And you are a bit dumbfounded and overwhelmed.  Because who knew this would all happen so soon?  Summer?  Now?

As a young, single, thoroughly unprepared summer squash momma myself.  I understand.

I felt lost and dazed and confused for a day or so.  Until I was hit with a large dose of girl power. 

And thought.  "Alice Waters, the queen of slow, local, sustainable food.  The woman who's foodie beliefs are basically everything I live and breathe for.  She'll know what to do."

And. She did. 

This pasta is at once sweet and spicy, getting it's hit from some jalapenos and red pepper flakes (the latter of which were not in the original recipe but I thought it rather prudent to add them in) and it's sweetness from the corn and zucchini.  It's a meal so simple and fresh flavored that you'll swear you're eating summer.  Even if it's not June 21st yet.

Summer Squash and Corn Pasta
Serves 5-6, adapted from Alice Waters's Chez Panisse Vegetables


4 to 6 small summer squashes (I used a farmer's market mix of pattypan and zucchini), chopped small
5 to 6 ears sweet corn (or 1 lb frozen corn)
1/4 cup cilantro leaves, chopped
2 cloves garlic
1 tbsp butter
1 jalapeno pepper, minced
1/4 tsp red pepper flakes
2 tbsp olive oil
1 lb pasta
salt and pepper, to taste
1 lemon

1. Cut the squashes into small dice.  Cut the corn kernels from the cob.  Peel and chop the garlic and jalapeno finely.  Bring a large pot of salted water to a boil.

2. Heat the olive oil in a large non-stick skillet.  Saute the squash in the olive oil until tender and a little brown.  Season with salt and pepper.  Add corn, garlic, jalapeno, and red pepper flakes to the squash.  Cook a few minutes more.

3. Finely chop the cilantro.  Add the cilantro and butter to the pan.  Taste and correct seasoning.

4. Boil the pasta, add it to the pan and toss all together.  Squeeze one lemon's worth of juice over the pasta.  Serve immediately.

  1. Good for you. While I adore winter squash, I am not as smitten by summer squash. I only planted 3 zucchini seeds in the garden because I didn't want an overabundance of zucchini... but I have plans for them already. I am planning for the summer of the zucchini noodle. :)

  6. Last year was the first time I cooked with pattypan squash and ended up just chopping and roasting it ever time. This is a great way to use it!

    Regarding the summer: I know what you mean... the heat hit San Francisco this week, and I've been grilling since Sunday. Absolutely incredible!

  28. I bought both heirloom tomatoes and cue ball squash at the FM last weekend even though we are going to be overloaded with it from our garden in a week or so! I just couldn't hold out any longer. I will definitely be trying this!

  31. We are just getting asparagus in our markets (!) but I will certainly keep this gorgeous plate in mind for when summer does make an appearance. I often look at her recipes and am turned off by the simplicity. Like how can she be so revered for putting together such simple things. But, of course, that is what makes her revered.     Went to the Farmer's market last night and bought way too many apricots. Should have bought summer squash. Next week.

  45. I really enjoy pasta salads in the summertime particularly when combined with interesting vegetables - summer squash is one of my favourites. Also like the inclusion of pepper flakes and jalapeno... sounds delish!

  55. I'm so excited to see summer squash at the farmer's market!! I can't wait until the ones in my garden start growing...they still have a ways to go. I'm also super excited for fresh corn. Nothing beats summer corn. Alice Waters always knows her stuff, so I bet this is a great recipe.

  61. The farmer's market is truly a magical and inspiring place. I love those little squash. I ask what they are every time just so I can here the gentleman who sells them say "pattypan." I think he is catching on to me.

  64. yes I get the pattypan = babies idea but pattypan actually makes me think of cupcakes and for a moment I thought maybe you were going to bake them into amazing cute cupcakes - it would work and really be much more satisfying than kids (which I only say because I have a screaming one in the house as I type but I am just biased - on a good day I would take kids over cupcakes1)

  76. Just watched "Julie & Julia" . . . how about cooking through one of Waters' cookbooks, in "Alice & Joanne" fashion? (Okay, maybe after you finish med school -- first things first!) Waters' recipes are, bar none, classic and baby squash never had it so good. Brilliant interpretation, J.

  89. Not sure I have ever seen a recipe so suited for summer, the colors and flavors here are perfect. I breathed a little sigh of relief because summer is not a figment of my imagination afterall. (I have seen WAY too many (e) all of the aboves in the past 5 weeks than I could have ever imagined).
