I've been loving all the veggie recipes lately, Joanne! This is no exception -- love the colors and anything with sun-dried tomatoes is a big YES in my book.
I just saw another lasagna post and I was thinking the exact same thing. Lasagna should not be just a winter food. I'm so excited that this uses sundried tomatoes because I have a bunch to use up!
You have changed my mind about baking lasagna in 98 degree, 95% humidity levels in South Carolina.....who cares how hot it gets with a lasagna such as yours! Blissful heat! I wish you didn't live so far! We need great cooks like you down here! Grazie!
It looks great! Alexis and I visited Larry's (Big Dude's Eclectic Ramblings) today and had asparagus picked straight from the ground. WOW it was so flavorful compared to store bought. it would go great in your lasagna.
This looks delicious! Love the freshness of the asparagus on a normally heavy dish. Im such a sucker for Italian food and just happen to have asparagus in the fridge :)
