Coconut Potato Curry with Basil and Cashews...Eat.Live.Be.

I cooked dinner at 3PM last week and none of you batted an eye when I told you.

That's why I love you.

My future husband, on the other hand?

This is one of those things we're going to fight about until we're 86. 

I mean, in all likelihood, he'll think it's cute and endearing at first.  I'll be his crazy little marathon-running food blogging wife who refuses to let him eat until she's taken 93 pictures of a bag of potatoes.

It'll be our little inside joke that dinner is always tepid and that we can't ever eat at the kitchen table because it's sacred photo-taking territory.  Until, that is, it becomes our little inside screaming match.

("Cute and endearing" only lasts so long.)

"Why do we eat like senior citizens?"

"Why is our grocery bill more than our rent?"

"Why can't you ever just cook anything normal?"

Man, I'm so mad at him.  And we haven't even met yet.  (That's not a good sign, is it?)

Maybe I'll just have to train him better.  Make him think that it's his idea that mid-afternoon is prime cooking time.

Brainwash him into falling so in love with curry that he demands we eat it every night.  I'm not averse to such trickery.

I'll start with this potato curry.  It has a creamy coconut cashew gravy that he'll contemplate drinking straight from the pan. A curry so addictive that he might not want to eat anything else ever again.

But then I'll have to remind him that I never make anything twice.

Do any of you have a good marriage counselor?  I think we're gonna need it.

To totally switch gears now, today at Eat.Live.Be. we're talking about our progress in the five months.  Have we met our goals?  Have we been successful?  Has anything changed?

This is a loaded question for me.

Am I the size that I want to be?  Did I manage to go shopping for new pants last week without having a complete meltdown in the middle of the store?  Um. No.

I'm getting there.  But still. No.

I think, though, that my attitude and my outlook are much improved from January.  I'm committed to having a good marathon training season.  I want to feel good, irregardless of how I look.  Now that I'm finally (mostly) uninjured, I want to stay that way.  And to do that I need to treat my body better.  It can do amazing things if I let it.  And by continuing the vicious cycle of criticizing it, feeling bad, and then eating tons of crap...I'm just not letting it.

For the past two months I've been much better at that.  At letting go after I eat something "bad" and not berating myself about it.  And I feel it in my bones that if I just stick with this, I'll end up back at the size that I want to be.  In the end, I'm the only one who stands in the way of getting what I want.  And I'm just not willing to let myself do that anymore.

How about you guys?  What has changed for you in the past five months?  Are you where you want to be, or at least on the road to getting there?

Coconut Potato Curry with Basil and Cashews
Serves 3-4, adapted from What's For Lunch Honey?

500 g new potatoes, steamed for 10 minutes
1/3 cup cashews, soaked for 10-15 minutes and then chopped
1 cup green peas, fresh or frozen
2 cups cherry tomatoes
2 tbsp tomato paste
1/2 tsp cumin seeds
1/2 tsp cayenne pepper
1/2 tsp coriander
1/2 tsp garam masala
1 can light coconut milk
1 tbsp olive oil
Handful of basil, chopped
Salt and pepper

1. In a large pan, heat the oil and cumin seeds.  When they begin to sizzle, add the cashews and allow to gently roast.  Add the steamed potatoes and toss to coat.

2. Add 1/2 cup water with the tomato paste and incorporate.  Add in the cherry tomatoes and simmer for 5-8 minutes.

3. Add all the spices.  Stir well to coat the potatoes.  Mash any of the tomatoes that are cooked through.

4. Simmer for 3-5 minutes.  Add the coconut milk and peas.  Simmer until the sauce begins to thicken.  Add salt and pepper to taste.  Add chopped basil.

  3. it takes a special man to deal with a food-bloggin'-lady. very special. i'd like to think i've found one, but also make concessions - my plate is the one that gets cold from photographs, and he usually starts eating while i'm awkwardly propped at the counter taking pictures. it works.

    changing our attitudes about our bodies is certainly the first, most important step. glad to hear your mind is changing! mine certainly is too. it feels good.

  6. I laughed at the part where you were arguing with your future husband. I have actually gotten in several arguments with my family about having to shoot whatever food I made before I serve it. And the grocery bill more than rent part - totally get it. You are too funny! And these potatoes look DELICIOUS.

No I don't have a marriage counselor but I have to say I have to start looking for one.Me and my spouse do quarrel when I take gazillion pictures of a dish before I let him taste it..Sometimes he threatens me that he will break my camera and my picture-taking fingers.

  9. Yum! Looks like a wonderful potato curry. My husband doesn't eat sweets so we avoid those fights. He could care less about fresh baked anything sittingon the counter. You need to find a husband who doesn't eat :-)

  18. If your husband doesn't kiss your toes for preparing him food that good, I think you should ship him right back!!! :)
    My husband and kids have learned to wait patiently for their food. They have learned to put up with all sorts of weird experiments. They have learned to ask before taking food. (Ma, is it ok to start feeding our hungry bellies yet? Are you sure 226 photos is enough? Did you get the baguette from every angle?)
    In my opinion, it's a very small price to pay for delicious (blog-worthy) food.

    My husband is so thrilled not to have fast food every day that he can tolerate the pictures and the cold food, he still remembers Taco Bell dinners! Your future husband is a lucky guy, he just doesn't know it yet!

  22. Lol. The first half of the post...it's as if I wrote it, except in the present tense, not future. Paul would give anything to eat at a normal hour, have it served warm, and god forbid I ever make the same thing again. His head would spin if I actually did that. If you find that marriage counselor, you let me know.

    p.s. and don't you find that you could take 100 pictures, but it's always the first 5 that are the best.

My mortgage broker nearly keeled over in shock when he was interviewing me for a mortgage application and asked me how much I spent a month on food - and that was even after I'd played it down a little to what I thought might be normal. Obviously, I still don't get how little normal people spend on food!!

    This curry looks absolutely wonderful - I have it bookmarked and it will be I think one of the first things I'll make when I get home from holiday - the perfectly warming, and comforting dish after a bit of long distance flying.

  45. Hahaha! Okay, that has been my house for almost two years - here I am rushing to take a picture and there is my husband standing over me rolling his eyes because his food is getting cold. Then I introduced him to Tastespotting. He likes to eat and turns out he likes to look at pretty pictures of food just as much. So I have started asking him to find a picture he likes of whatever I'm cooking to give me an idea of how to set up the shot. Now he's actually getting into the whole photography thing!

I'm doing better too, Joanne. :-) My ideals of perfection have diminished and I'm very happy with "better than I was" and "farther along than I used to be." :-) I may not be as small as I like, but I'm ALIVE, I'm stronger, healthier, braver, and bit by bit I'm getting smaller and more athletic. That is GOOD! And I adore this curry. I'd totally be drinking out of the pan!

  49. Appoint him as a spot boy and keep him enagaged- that's one of the best ways to tame him while u shoot- trust me on this one.Secondly send him to electronics store while you go grocery or prop shopping..I tell you that WORKS!!
    I dont know which ingredient I should pick that I do not love in this recipe- potatoes, coconut milk,basil & cashews ...I m in culinary heaven!! Very Very creative recipe!

  60. Dear Joanne, You have to like yourself for who you are, what you are and not how you think someone thinks you should be. It is a long journey home to find that serene place and not really sure when we reach that place.

In these last five months I haven't lost as much weight as I would have liked to, but I have gotten my blood pressure down so that my dr. no longer wants me to take meds for it- I'm pretty pleased!

  73. Maybe more Thai than Indian. Basil, known as Tulsi Patta in India is considered a sacred plant and would not be used in cooking. I like your inclusion of cashews, sounds really good.

  81. What a gorgeous curry dish! I think eating is all about making choices and balancing those choices. I try to eat as healthy as I can whether I eat at home or at a restaurant, but that doesn't mean I'm going to deprive myself of a special treat once in a while. I'm just much more picky about what that treat will be.

  86. My husband is totally trained as are my boys, my family, my husband's family and our friends. It's pretty hilarious when you think of it. And what's not to like about a bad of taters, right. I mean they're pretty sexy in the right light. Okay. Loving this curry dish. Really. Been craving curry like crazy and thinking of doing a week of curries just so I can figure them out better than I have. :)

  91. Jo, I can totally relate to your Eat.Live.Be. contemplation for the week. Too many times, I beat up myself when I look in the mirror or make a particular food choice that I just stay in a constant fighting funk with myself, and it's really hard to crawl out of that hole. But over this past year, I've started to claim myself--and, consequently, my choices. Cooking for myself is so satisfying; when I choose what I do with my body, I feel empowered. And I'm starting to feel that on a consistent basis--exciting!

    Oh, and your curry? I would totes marry you if I was a boy. Lucky fiance. . .

  105. Anonymous - Thanks so much for your comment! there is actually no curry POWDER in this dish. When it comes to Indian cuisine, curry typically refers to a hot, spicy gravy-based dish...which this is. Many of the spices in this dish are found in curry powder, however, so adding them separately replaces the powder.

  106. Being very very old, I give unsolicited advice to people.
    Honey, here's what I want you to do.
    I want you to dump the medical degree, dump the potatos in plastic sacks, rent a tiny small-holding just out of town from a farmer (who will charge almost nothing, he'll probably be charmed if you offer some organic veg in fact) and plant some vegetables. Then, I want you to commute out there once a week to labour in it. While the veg are growing, I want you to open a little modest bistro in a nice neighborhood within commuting distance of the small-holding, and have it open from 4pm to late.
    This will solve all the problems and provide a wonderful bistro for your local community.

  107. this is my second time making it - i omit the cayenne and use a mild curry powder instead for a very modest heat. we have a serious chicken little in my house, and to accommodate the masses at a potluck, mild seemed the better option. one day i will make it with the cayenne for DH and me. we absolutely love this recipe! i serve it with rice that i make with bay leaves, whole all spice, and whole cardamom pods (just make sure you don't eat any of the spices!). thank you so much for sharing such a fabulous recipe that the omnivore in my house likes just as much as i do, you rock!
