Hi! You don't know me but I LOVE your blog! I have my zucchini and Eggplant baking as we speak. I just randomly happened to have been given some eggpplant and noticed my mint plant was growing great! I have basil ice cream in the freezer... SOOOO good!! You make me laugh and I always look forward to new recipes! Keep up the good work :)
