ReplyDeleteI've taken a bite of unripe mango, so stringent! Although it's common to eat them green in some countries like Thailand.

ReplyDeleteunripe mango = no good. I have some soba noodles in the freezer. This would be perfect! BTW...the Spicy Chipotle Honey Chicken with Sweet Potatoes and Winter Squash was incredible! Hubby kept saying with each bite how delicious it was. Thank you!

Soba noodles are my all time favourite. They go great with anything and are fab on their own. Love the combo of mango and eggplant :)

We had the worst mango this year and I'm not ready to get back on that horse. It was insipid and made me sick later that night.
ReplyDeleteThis is my first time here and I'm glad I popped by because your recipes are delightful! I have a pack of soba left and as I was getting sick with the normal peanut sauce and mirin dips, this came at the right time - I'd never had thought of an eggplant and mango combo!
