Soba Noodles with Eggplant and Mango

You know what's worse than having your mother try to serve you a fruit salad full of unripe chalky mango for dessert?  Not making this soba noodle with eggplant and mango salad.  Check out Marcus Samuelsson's blog for the recipe!

  5. I've taken a bite of unripe mango, so stringent! Although it's common to eat them green in some countries like Thailand.

  19. unripe mango = no good. I have some soba noodles in the freezer. This would be perfect! BTW...the Spicy Chipotle Honey Chicken with Sweet Potatoes and Winter Squash was incredible! Hubby kept saying with each bite how delicious it was. Thank you!

  29. This is my first time here and I'm glad I popped by because your recipes are delightful! I have a pack of soba left and as I was getting sick with the normal peanut sauce and mirin dips, this came at the right time - I'd never had thought of an eggplant and mango combo!
