Recipe: Chocolate Peanut Butter Whoopie Pies {Joy the Baker Spotlight}...and a GIVEAWAY!

I'm starting to be convinced that my roommate...my dearest darlingest roommate whom I could not get through life without...might be a serial killer.

Proof?

I have none.

Except...that I left one of these whoopie pies in the fridge for her.  Emailed her twice to let her know that it was there.

(I nag on occasion.  But mostly when it comes to forcing desserts on others.)

That was Wednesday night.

Fast forward to today.

Friday morning. 6:58 AM.

I have checked the fridge no less than 26 times in the past 36 hours.

And it is still.  There.

And what life has taught me is that the only people who can ignore the call of chocolate and peanut butter are either (a) my brother (the boy keeps Reese's on his coffee table.  And doesn't eat them all in the first five minutes of setting them out. WHO.IS.HE?!?!?!?) or (b) public offenders who are otherwise mentally preoccupied with plotting their next attack.

I would be fearful for my life.

But I'm much too busy thinking about how long I have to wait until she officially forfeits her right to that whoopie pie and I can reclaim it for myself.  48 hours? That seems fair, right?

Moral of the story - these are chocolate pillows with a sweet/salty peanut butter fluff filling. (SO.GOOD.)  Make them.  Eat them.  And don't be a serial killer.

Chocolate Peanut Butter Whoopie Pies
Makes about 18 pies, adapted from the Joy the Baker Cookbook

Ingredients
    For the cookies:
  • 2 cups AP flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1 tsp instant espresso powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1 cup buttermilk
  •  
     For the filling:
  • 1/2 cup unsalted butter, softened
  • 7 oz marshmallow fluff
  • 1/2 cup smooth all-natural peanut butter
  • pinch of salt (I added 2 pinches)
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/4 cup coarsely chopped roasted and salted peanuts

Instructions
  1. Place a rack in the upper third of the oven and preheat to 350.  Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.  Set aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment, beat together butter and sugars until light and fluffy, 3 to 5 minutes.  Stop mixer and scrape down the sides of the bowl.  Add the egg and beat on low speed for 1 minute.  Beat in vanilla.
  4. Scrape down the sides of the bowl.  Add half of the flour mixture and mix on low speed.  With mixer running, slowly add the buttermilk.  When just incorporated, add the remaining flour mixture. Mix until just blended.  Finish incorporating the ingredients with a spatula.
  5. Spoon the batter by the heaping tbsp (I used a medium cookie scoop) onto the prepared baking sheet, leaving at least an inch of space between cookies.  Bake for 12 to 14 minutes, until centers are cooked through but cookies are soft and tender.  Repeat with remaining batter.
  6. Remove from the oven and let cool on the pan for 10 minutes before removing to a wire rack.  Allow to cool completely before frosting.
  7. To make the filling: in the bowl of an electric stand mixer fitted with a paddle attachment, beat together butter, fluff, peanut butter and salt until smooth and no butter lumps remain.  Add the powdered sugar and vanilla.  Beat on medium speed for 3 minutes, until fluffy.  Stop the mixer and remove the bowl. Fold in peanuts with a spatula.
  8. When cookies have cooled, spread a scant 2 tbsp filling onto the bottom of one cookie (I piped it on).  Top with another similar-sized cookie.  Fill all cookies and sandwich.  Cookies are best stored wrapped in plastic wrap in the refrigerator.

    BTW one can look at the situation completely differently. Such desserts are a sought after commodity, they usually don't last long. You usually have to hide them, even from yourself. If there is one sitting for a while and someone gets many reminders to eat it, its probably because there is something wrong with it or its been poisoned:)

  16. These look ridiculously good! I've never been tempted to make a single whoopie pie before, but these have my mouth watering. Your roommate? Yeah, she's a weirdo. ;)

    My favorite condiment is easily ranch dip. Classy, right? I'm judging that solely by the amount of the condiment that is made in my house on a regular basis. Next runner up is definitely homemade ketchup. YUM

  22. If I were a condiment, what would I be? All I can think of is spicy mustard, but a fresh cilantro mayo is also quite delicious. My hubby is the condiment king. His friends sent a goblet of ketchup over to our table at our wedding - to make a toast. Hardy, har, har. :)

  28. Your whoopie pies look delicious. I'm struggling to imagine why your roommate hasn't eaten them. Is she trying to lose weight for a big date this weekend? Has she given up chocolate (or peanut butter) for Lent? Or is she just so accustomed to your wonderful baking that a whoopie pie isn't that big a deal any more?

  30. Omg...where to start. First of all, my Dad always says chocolate and peanut butter is the classic All-American combination and to not like them is akin to being a traitor. I think you are right to worry about your roommate ;-)

    And, I'm sure you know that my favorite condiment is mustard :) And, I don't see anyone else more fitting to win this giveaway! LOL!

    Those whoopie pies look addictive. As in I have to make them. Except that peanut butter birthday cake is nagging me too. I need a reason to make them both!

    And my favorite condiment is: ketchup + horsey sauce to dip fries in. Ketchup with mayo and Tabasco works too--I can't get enough of it piled on my fries. It's a good thing I don't eat fries too often!

There's no way I resist chocolate on my desk. I mean, seriously? :)) Not eating such things means not having them in the apartment, right? heh.

  67. My favorite condiment is what I affectionately call "Green Goya". It's proper name is the jalapeno salsita. After moving from the Northeast to the Midwest, we went into panic mode when there was less then 1/2" at the bottom of the bottle. Joyfully, we found a European market that stocks it.

  73. Marshmallow-peanut butter frosting? I'm seriously going to cry if my husband doesn't make that tomorrow. Just the frosting. The third molars came out today, so no solid food just yet.

    And favorite condiment? Actually it's mustard--usually in powder form! I keep two different jars of mustard in the house at all times, one of McCormick's and one of Chinese hot mustard. More than half of my savory recipes include it, and we have three bottles of mustard in the fridge as well, for dipping!

  124. Would hummus be a condiment? I love to mix plain hummus and BBQ sauce, and I eat that on everything. Best on things like potatoes, or on a black bean salad.
