This recipe is from the cookbook Meatless Meals for Meat Eaters, the author of which is actually another blogger, Miriam! Although the rest of her family eats meat, Miriam's goal is to provide them with healthy vegetarian meals that are so tasty they won't even realize they're meatless! Her cookbook is full of delicious comfort foods turned veg that will definitely satisfy just about any palate. Highly recommended!

ReplyDeleteGreat healthy meal, as always. You know I always think that I hate eggplant but if it's in front of me, I'll eat it, thinking that it's tofu. And I'll like it. But I'm still so stubborn to believe that I hate eggplant.

ReplyDeleteEggplants are my absolute favourite veges!! And I love stir fry eggplants especially when they're slightly overcooked so I get that soft, chewy texture.. mmmmmm......... Totally drooling over this now!!!
