Recipe: White and Dark Chocolate Coconut Macadamia Cookies

I've come to the conclusion that if I just had five extra baking pans....I could totally get behind the art of cookie baking.

As it is, though...I find scooping to be tedious and underbaking to the perfect amount of chewiness to be stressful and being forced to use my pizza pan as a cookie sheet to be...confusing.

Confusion when you're baking is ominous.  Avoid it.

The only part I majorly enjoy is the five to ten times where I totally miss the cookie sheet and accidentally scoop cookie dough into my mouth.

Accidents happen. 

(Like my baby sister for example...)


Especially when you're confused about what exactly constitutes a cookie sheet and what doesn't.

Sometimes, your oral cavity just seems like the best possible baking platform in your apartment.  Especially when you've used up both of your cookie sheets and your pizza pan and it's almost midnight and you still seem to have at least two dozen cookie's worth of dough in your stand mixer.

And then you wonder why you end up waking up the next morning with a cookie dough hangover.  Weird.

I do have to say, though, that these cookies are worth even the most dangerous of forays into cookie making territory.

They have everything the classic white chocolate mac nut cookie has to offer.  And so much more.  The dark chocolate chips add a nice sultry note to the super sweet white chocolate, while the coconut ensures that you'll get that perfect chewy texture every time. 

The coworkers went crazy over these and may or may not have eaten them by the fistful.  Given how much taste testing I did in the quiet and comfort of my own home...I can't say I blame them.

White and Dark Chocolate Coconut Macadamia Nut Cookies
Makes a bit more than 3 dozen, adapted from Two Peas and their Pod's eCookbook - Cookie Cravings

Ingredients
  • 1 cup unsalted butter, room temperature
  • 1 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 1/2 tsp vanilla
  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup sweetened shredded coconut
  • 1 1/2 cups white chocolate chips
  • 3/4 cups salted macadamia nuts, coarsely chopped
  • 3/4 cups dark chocolate chips


Instructions
  1. Preheat oven to 350.  Line a large baking sheet with parchment paper or a Silpat and set aside.
  2. Cream together the butter and two sugars in the bowl of a stand mixer on medium-high speed until light and fluffy, about 3 minutes.  Add in the eggs one at a time, scraping down the bowl after each addition.  Add in the vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.  Add the dry ingredients to the wet ingredients, mixing until just incorporated.  Stir in the coconut, white chocolate chips, macadamia nuts, and dark chocolate chips.
  4. Using a medium cookie scoop or a tbsp, drop the dough onto the baking sheets, about 2 inches apart.  Bake for 10-12 minutes or until the cookie edges are slightly crisp and brown.  Let cookies cool on the baking sheet for 2 minutes and then transfer them to a wire rack to cool completely.

  4. I know exactly how you feel, sometimes I get so bored of scooping cookie dough and I completely run out of places to put baking trays and cooked cookies and it all seems just too much. But then I eat a warm cookie and it all seems worthwhile. Love the addition of coconut to these cookies and the double chocolate hit. Perfect.

  7. That's why I have 2 super big cookie sheets plus a few smaller ones... I love cookies but hate having to wait for a cookie sheet to cool down enough for the next batch to go on it. They look fabulous... no wonder there was a lot of taste testing going on!

  11. The cookies I make most often have the most spectacular dough ever. The cookies themselves aren't even that great.. I make them all the time specifically for the dough. I'm pretty sure at least half of the peanut butter that enters my house enters a batch of that dough!

  13. My favorite part of making cookies the cookie dough! I don't care about raw eggs, I see people put them in there smoothies, so I am all for dipping fingers in the bowl, while you wait for your cookies to bake! Your cookies look and sound amazing. I thhink I am going to make them this weekend and than freeze them. I have no self control what so ever when there's cookies with choclate and coconut.

  20. I had white chocolate and dark chocolate together last night too! And by that I mean handfuls of white chocolate chips, then dark chocolate chips, then white chocolate chips again... These look soooo perfect!

  28. Hey Joanne, been awhile since I was able to stop by and visit. As always, simply stunning photos and delightful stories. BTW, my daughter got her navel pierced several years ago when she was 16. Of course got infected, ruined her for bikini season that year (which for me was a good thing for me). After that summer, she let the holes grow shut and never put it in again.

    But I digress... Are you running Boston this year? My favorite cousin-in-law is running for the first time. 3rd wave, but she made it and is thrilled!

    But I digress. Wanted to share a new find since you love the sweetest of potatoes... Sweet potato chips, spritzed with flavored artisanal vinegars... post to come shortly, but new batches made 4 days in a row!

  30. Anything with dark chocolate in it HAS to be better than the white chocolate version, I think. I for one am still not convinced that white chocolate should even have the word chocolate in its name. These sound delightful.

  45. If I only had one cookie sheet, I don't know if I'd ever make cookies. As it is, I have three airbake ones, plus 4 regular! I like cookies. :) And these look superb--I love the sound of the white chocolate, dark, and coconut!!! And you baked them to underbaked perfection.

  47. Cookie dough hangovers are the best! They're so much better than the alcoholic ones where you can't even see straight or hold down any type of food. Man am I glad I'm not in college anymore.

    Btw, these cookies are awesome! My most favorite cookie combination is white chocolate and macadamia but you just took it to a whole other level!

I used to care less about macadamia but my love for white choco and macadamia grew for the past 5 years and now it's my favorite! Adding coconut makes this cookie extra special!   63. My husband loooooves white chocolate macadamia nut cookies. I never thought of adding dark chocolate or coconut, but it sounds pretty genius. I have the same problem with the cookie dough jumping out of the bowl into my mouth....weird. I've started making half batches every time I make cookies because I'm way too impatient with only two cookie sheets ;).
