ReplyDeleteKale is something I've yet to really tangle with, and lentils... oh lentils... I cannot get into them. They remind me of how new-agey people smell. Isn't that bizarre? But somehow you always make these things look gorgeous and tasty!

ReplyDeleteGreat way to use kale in something other than the traditional salad. Plus, you have savory lentils, sweet sweet potatoes and slightly bitter kale that are all mixed together. It's a lot of flavor that keeps your mouth happy!

I don't have kale, but I do have collards and I think they'd do just fine. Lentils, greens and sweets? It doesn't get much better than that! :)

ReplyDeleteSee... I have such a weird thing about lentils. I love them, I really really do! BUT, my issue is that I am just now starting to figure out how to cook them properly. Either they're too crunch (yikes) or too mushy (yuck)... but, again, I've started to get it down, so I'll have to try this out right away.
