Recipe: Red Rice and Edamame Salad with Lemon-Miso Dressing
Bathing suit season is looming ever nearer but rather than give ourselves goosebumps about it, we should all just eat this salad! Head on over to Marcus Samuelsson's blog for my post and the recipe!
Such an awesome idea what with the red rice! I think this is definitely going to become one of my #saladaday chow-downs. And possibly an alternative to my stir fried noodle addiction... Thanks for the solid salad recipe Joanne!
This looks ridiculously good. I'm proud of myself, for once I am prepared for bathing suit season!! One question, do they sell red rice at the grocery store? I have never heard of it.
I just looked over at all the ingredients in that salad right now... oh heaven in a salad! I love the red rice, the chickpeas and edamame, and the sweet Asian-ish dressing! I can totally have this for dinner without a need for anything more.
Beautiful recipe but wow, really? More doom-and-gloom "bathing suit season" fearmongering? We get that shame from everywhere else in the media, why not just focus on choosing healthy foods, feeling amazing about yourself, and having a great summer?
Hi Anonymous, thanks so much for your opinion! I totally agree with you that the focus should be on eating healthy and feeling great because of it but I'd be lying if I said that bathing suit season didn't bring out the worst in my self esteem issues or that I didn't feel utterly self conscious wearing one. I'm working on it. I certainly didn't mean to shame anyone. I just know that I feel better about the way I look when I eat healthy foods and, whether I've lost weight from doing so or not, feel much more comfortable with my body. That's the message I meant to get across and I'm sorry if that wasn't conveyed.
Ah yes, bathing suit season! That's the reminder we all need to start eating right. What a lovely colourful salad and yes, just right for the bikini season xx
first of all I need red rice in my life, secondly I heart edamame like you wouldn't believe and last but not least that dressing is hands down amazing!
some days I am constantly playing catch up - I've discovered endamame but red rice is still a mystery - but it sounds like one worth solving - great salad
Ever wonder what would have happened if Carrie Bradshaw had gone to medical school and filled her two by nothing New York apartment with cookbooks instead of shoes? Wonder no more. Join me as I weave my way through life in NYC as an MD/PhD student/marathon runner/grocery shopper extroadinaire....and eat really well while I do it!
Eats Well With Others - Often crazy. Mostly ridiculous. Always delicious.
