While I read it every day, I don't often comment on your blog because we eat so differently - It's why you're thin and I'm not. But since I like kale and caramelized onions and I'll put an egg on just about anything, I'm sure I'd enjoy this one.
Oh my, this looks great! But where are the caramelized onions? When I make this, I can't wait to try kale and caramelized onions together with a tofu scramble of sorts!
I keep on learning about how good kale is for you...and then I buy a huge bunch and never finish it! This recipe would get me going, for sure! Thank you for sharing!
Kale, egg, and onion, together at last! I really need to get into the habit of making something like this for breakfast (instead of, you know, coffee and only coffee).
Now that looks far more enticing and healthful than your usual tortilla bowl salad. I think you should set up shop and sell these! There would be a line out the door.
