Recipe: Zucchini, Edamame and Buffalo Mozzarella Pasta Salad
If pasta salad bathed in a sea of green sounds like your kind of meal, then check out my recipe for this zucchini, edamame and buffalo mozzarella salad over at Marcus Samuelsson's blog!
I read your recipe this morning on my phone and I just had to come back and tell you how fantastic is sounds. I love it! I hope your day is a wonderful one.
Now that is a gloriously green salad, and I can't even begin to express my love for cooked, chilled zucchini. Doesn't matter how it's cooked, but as long as it's ice cold, I can't get enough.
I absolutely love that there are more vegetables than pasta in this dish. I also absolutely love that you put edamame in a pasta dish. And furthermore, I absolutely love that you blog for Marcus Samuelsson :)
I've been sending your zucchini recipes to my sister in Virginia, who planted WAY to much zucchini. :) They are covered up - she said, "Keep 'em coming!"
