If you're finding yourself in a zucchini rut this week, then head on over to Marcus Samuelsson's blog to check out my recipe for Summer Fusilli with Zucchini and Heirloom Tomatoes! Although it may seem like a plain Jane zucchini pasta, I promise it's anything but!

Love this! I have been loving pasta with fresh tomatoes and zucchini this summer!
ReplyDeleteFusilli is adorable!! Why do I not cook with it more often? I just love how you freshen up every recipe!
ReplyDeletesounds lovely - I must remember your trick of squeezing the water out of the zucchini to fry it - we haven't had much zucchini over winter and I am quite looking forward to it over summer
ReplyDeleteLove those noodles! And the recipe looks amazing...i can always use a new pasta in my repertoire :)
ReplyDeleteDoesn't look plain jane to me - looks awesome!

ReplyDeletei love fussili pasta... they are pretty and add the extra fancy look. love how simple and wholesome this dish is. :)
ReplyDeleteThis lovely dish will probably be my dinner tonight. Of course since it'll be 105F+ I'll attempt to substitute sun-dried tomatoes vs. turning on the oven. That photo's one where I want to reach through the screen and grab a bite!
ReplyDeleteI am loving those noodles and the rest of the dish rocks too.
ReplyDeleteYou never offer us anything less than extraordinary, Joanne! I love the pasta shape you chose, and the sauce looks unique and flavorful. Thank you for sharing!
ReplyDeleteDear Joanne, This is a wonderful dish. Blessings dearest. Catherine xo
ReplyDeletePlain Jane nothing, simplicity rules! I love it when you can actually taste each and every ingredient- It makes it so clear that they're all used to their full potential in the dish. Plus, those curly noodles could just be tossed in olive oil and they'd still be fantastic. I haven't had them in so long (used to call them "telephone cords" as a kid) so thanks for reminding me about that fun shape!
ReplyDeleteWhy oh why have I never eaten fusilli? It is so wiggly and appealing!
ReplyDeleteYumm! This is my kind of lunch!
ReplyDeleteYummy! We have the Zucchini and tomatoes in our garden!
ReplyDeleteNone of your recipes are ever plain Jane!! ;)
ReplyDeleteYour recipe looks amazing, not plain jane at all!! I need to go check it out!
ReplyDeleteI'm going to cry when tomato season is over.
ReplyDeleteSo beautiful! And zucchini abounds in our CSA box... :-)
