If you get raging alfredo sauce cravings like I do, but don't really feel like expending all of those calories on eating it...then head on over to Marcus Samuelsson's blog to check out my recipe for this roasted red pepper goat cheese alfredo pasta! It is surprisingly light while tasting amazingly delicious.
I am submitting this to Presto Pasta Nights which is being hosted by Ruth of Once Upon a Feast! It is going to be the last Presto Pasta Nights EVER, which is very sad to me since it was one of the first blog events that I participated in. I would never have encountered a large number of the blogs I read today without it!! So thank you Ruth for all that you've done over these years in organizing and hosting it. It's been fun.

Mouthwatering, Joanne! I love roasted red peppers and goat cheese together. This looks perfect!

ReplyDeleteLove the idea of a light alfredo, and roasted red peppers and goat cheese are one of my favorite combinations!
ReplyDeletePinned this already and Stumbled it too! Alfredo makes my mouth happy but you took it up a notch with goat cheese and red pepper, two of my faves.
ReplyDeleteI usually don't like creamy pastas because they're TOO rich, but this sounds delicious! And I'm always looking for new pasta recipes for marathon training ;)
ReplyDeleteI only discovered goat cheese in pasta sauce rather recently and went totally bananas for it! I am definitely going to make this after vegan month. So, so, excited.
ReplyDeleteJumped there, jumped back...
ReplyDeletefantastic take, I am definitely trying it, the almond milk seems like a genius twist. I agree completely with you, Alfredo ordered at a restaurant is not worth the ton of calories, and after three bites I already regret it :-)
great post!
A great combo of flavours!
ReplyDeleteThat does look wonderful! Goat's cheese is my favourite!
ReplyDeleteOMG, I'm drooling!
ReplyDeleteThis blows alfredo out of the water! annd it's healthier? love!

ReplyDeleteCheers
CCU
This looks soooo good, especially on a cold, wet night like tonight. Please pass the cheesy pasta, PLEASE!
ReplyDeleteA wonderful combination. I think I could eat this for several days in a row without a problem!
ReplyDeleteSorry the presto pasta nights are over but there's nothing stopping YOU from continuing. :)
ReplyDeleteI think I'd love this pasta dish. It's got all my favorite things in it.
I love Alfredo, but my tummy doesn't....I can't wait to eat this!

ReplyDeleteOne of my favorite weeknight meals growing up was pasta with goat cheese.
ReplyDeleteThis dish looks CRAZY good. And not as bad as regular alfredo, I LIKE!
ReplyDeleteI have a terrible visceral reaction to goat cheese-I can only tolerate a tiny taste, like a very tiny sprinkling on a pizza, and only then b/c the taste soon goes away b/c of all the other flavor-lol! But your pasta looks soooo tempting!
ReplyDeleteA lovely delicious way to pair goat cheese and peppers. Joanne
ReplyDeleteI'm the same way with alfredo - love it but avoid it. Yours looks like a nice way to get the sauce with much less calories.
ReplyDeleteI love it Joanne and it is so sad Ruth ends the event! I have participated quite a few times and I remember it running for so many years!
ReplyDeleteFantastic looking pasta dish, Joanne! Simple, delicious and beautiful!
ReplyDeleteGoat Cheese in my alfredo sauce...swoon.
