Recipe: Roasted Red Pepper Goat Cheese Alfredo Pasta

If you get raging alfredo sauce cravings like I do, but don't really feel like expending all of those calories on eating it...then head on over to Marcus Samuelsson's blog to check out my recipe for this roasted red pepper goat cheese alfredo pasta!  It is surprisingly light while tasting amazingly delicious.

I am submitting this to Presto Pasta Nights which is being hosted by Ruth of Once Upon a Feast! It is going to be the last Presto Pasta Nights EVER, which is very sad to me since it was one of the first blog events that I participated in.  I would never have encountered a large number of the blogs I read today without it!!  So thank you Ruth for all that you've done over these years in organizing and hosting it. It's been fun.

  9. I usually don't like creamy pastas because they're TOO rich, but this sounds delicious! And I'm always looking for new pasta recipes for marathon training ;)

  10. I only discovered goat cheese in pasta sauce rather recently and went totally bananas for it! I am definitely going to make this after vegan month. So, so, excited.

    fantastic take, I am definitely trying it, the almond milk seems like a genius twist. I agree completely with you, Alfredo ordered at a restaurant is not worth the ton of calories, and after three bites I already regret it :-)

  39. I have a terrible visceral reaction to goat cheese-I can only tolerate a tiny taste, like a very tiny sprinkling on a pizza, and only then b/c the taste soon goes away b/c of all the other flavor-lol! But your pasta looks soooo tempting!
