Recipe: Bailey's Mint Chocolate Whoopie Pies

By outward appearances, I inherited at least 90% of my dominant genes from my father. I have his eyes, his sister's hair, his side of the family's nose, his sense of humor, his temperament, his math skillz, and his ability to use a computer without having heart palpitations at the thought of attaching a document to an email (ahem. MOM.). 

However, unbeknownst to many, my mother did pass along at least one skill to me.

And that is the ability to fall asleep within the first fifteen minutes of any movie/tv show/lecture/seminar/(lab meeting). Etcetera.

And by ability...I really mean compulsion.  Because it is SO out of my control. 

Case in point. I used to bring Americanos with FOUR SHOTS of espresso in them to class to help me stay awake. And would still fall asleep mid-cup. It was unreal.

The whole thing has become kind of a laughing point between myself and The.Boy.

At least, it was, until we "watched" Lincoln together on Wednesday night. 

And by that I mean, he, the American history Fa.Na.Tic, was pretty much riveted, while I, the American history illiterate, dozed in and out of consciousness.  I'm not quite sure what the problem was because, let's be honest, we both knew there was no way I was going to make it through that movie, but every five minutes he would attempt to wake me up with with threats of elevating intensity, ranging from "I'm going to quiz you on this before we go to bed" to "I don't even like you anymore" to "I'm going to recommend you for expatriation to the US government RIGHT NOW if you fall asleep ONE MORE TIME". 

Sheesh, I mean...they do say that falling asleep during an Oscar-winning performance is a crime...but in the metaphorical sense...right?

Thankfully, I had a secret weapon with me. In the form of these whoopie pies. You see, I have the privilege of knowing that someone loves mint chocolate almost as much as he loves rattling off esoteric information about all of our past presidents, so I just shoved one in his mouth after the movie was over and all of my sins were absolved.

Well, I still had to endure a pre-bedtime quiz.  But the charge of treason was dropped. So I'd say that's a win.

These whoopie pies are a mint chocolate lover's dream sandwich cookie.  The cookies themselves are a rich moist mint chocolate flavor while the filling is all peppermint buttercream with a hint of Bailey's.  They would be the perfect St. Patrick's day treat (but are also pretty dang good on a random Wednesday)!

Bailey's Mint Chocolate Whoopie Pies
Makes 20 whoopie pies, adapted from Tracey's Culinary Adventures

Ingredients
For the mint chocolate cookies: 
  • 1 1/4 cups all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 9 tbsp unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 cup buttermilk
  • 1 tsp peppermint extract

For the Bailey's mint buttercream filling: 
  • 2 cups confectioner's sugar, sifted
  • 4 tbsp unsalted butter, room temperature
  • 3 tbsp Bailey's Irish cream
  • 2 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/2 tsp salt
  • green gel food coloring (optional)

Instruction
  1. In a medium bowl, soft together the flour, cocoa powder, baking soda, baking powder and salt. Set aside.
  2. In the bowl of a stand mixer, cream together the butter and sugar until fluffy, about 3 minutes on medium speed. Scrape down the sides of the bowl and mix in the egg. Add in the buttermilk and peppermint extract. Mix until well combined (it will look curdled at this point but keep going!).  Stir in the flour mixture until just combined. Refrigerate for 30 minutes to chill.
  3. Preheat the oven to 350 and line 2 baking sheets with parchment paper.
  4. Using a cookie scoop (mine scoops about 1 1/2 tbsp dough), portion the batter onto one of the prepared baking sheets, leaving 2 inches between each cookie. Bake for about 10 minutes or until the cookies spring back when gently pressed. Transfer the baking sheet to a wire rack and let the cookies cool for a few minutes before removing them from the sheet and putting them on the wire rack. Repeat with the remaining dough, alternating baking sheets.
  5. To make the filling, in the bowl of a stand mixer fitted with the paddle attachment, cream together the confectioner's sugar and butter. They should be crumbly. Add the Bailey's, vanilla extract, peppermint extract and salt. Beat on high speed until light, fluffy and smooth, about 3 minutes. If you want green buttercream dip the back of a fork in the gel coloring and then dip it into the frosting. Mix until evenly distributed.
  6. Match the cookie pairs by size. Pipe frosting on the flat side of one cookie and then sandwich the cookies together, pressing the filling to the edges.

  5. My mom falls asleep during every movie, too. It used to really annoy me, but now I do it all the time!! I guess it's part of growing up slash being overworked! :)

    These whoopie pies look absolutely awesome! I might stay awake if I had one of these in front of me... But it wouldn't be in front of me for long!

  9. Oh no! I admit that I'm such a geek I used to tote around a book of Presidential trivia when I was seven years old, and pepper various adults with its (to me) fascinating facts and figures. It's pretty amazing that I ever made it to puberty, given how annoying I was as a child.

  17. I have a milder case of your "syndrome". It doesn't affect me in every movie, but it happens often enough that Phil makes fun of me for it. I actually dozed in and out during the documentary "Searching for Sugar Man" - great movie, but I must go back and watch some parts, because Phil said I missed "the best parts" (sigh)

    haven't watched Lincoln yet - it's a long movie, I take it. I hate long movies. (I know, I am a mutant)

What's clear is that these are a step above our any typical ubiquitous whoopie pie(s), quality-wise--you make the frosting sound and loook they way they do at a high end cupcake shops, and the cookie looks oh so very chocolatey, perfect companion for a historically riveting (read boring )movie in my opinion.

  19. Oh my gosh, I have that exact same genetic inconvenience! I perfected the art of holding my head upright during class even if my mind was somewhere in dreamland. I've never been accused of treason, though, nor did I have these gorgeous whoopie pies to smooth things over afterward.

  21. I love peppermint and chocolate together, it's such a wonderful combination. As for sleep, you are so lucky! If the tv is on, no matter what it is I have to stay up to watch. I have never fallen alep during tv or movie. WIsh I could! :) But as for work, I think I could fall asleep.

  22. I fall asleep a lot too... The scariest part is that I tend to doze off at the wheel every once in a while. Don't know how it happens, it just does and no matter what I do, I can't control it. Love these whoopie pies. I've never made the before. Might be time to give it a go!

  23. While I can certainly see how this could get you in trouble, I am a tad bit envious! I have the opposite issue. I have trouble falling asleep/sleeping in general, but if other people are around there is NO WAY it ever happens. Long plane ride? I'm alert the whole way through - no matter how tired I may be.

  27. My bf makes fun of me ALL the time for this! I think the only movies I haven't fallen asleep in the middle of were Pride and Prejudice (bc it's awesome) and Hunger Games (bc I was traumatized). I like to think of it as my ability to gauge how good a movie is ;p

    I loved Lincoln and it kept me riveted, but I'm embarrassed to say I fell asleep a couple of times during Amour. And I even liked the movie! (Note to self - next time try four shots of espresso.)

  32. But did you like the movie? I just love Daniel Day Lewis and his Oscar acceptance speech was so humble. I love how he can be one of the world's best actors yet stay away from the paps and live his life almost in obscurity - almost! I love chocolate and mint too xx

  38. There's no shame in falling asleep. Put me in a dark place and I'll go to sleep too. I think it has something to do with getting up early and working all day, but I could be mistaken. I'd stay awake for those cute little minty whoopies though!

  41. I'm not quite in the same category as you, but it turns out I do fall asleep without realising it if watching TV in the evening when tired. As someone who doesn't nap and generally doesn't sleep anywhere but on my bed - I always find this disconcerting. And it happens at least once per week.

  44. Funnily enough I get less sleep now and am always tired but I fall asleep less during movies - maybe it is just that I watch less movies but I hate waking up and finding a movie is over and not knowing what happened - maybe one of these yummy pies would help me feel better :-)

  56. Even though the acting was absolutely wonderful, Lincoln wasn't the most exciting movie so I can see why you'd fall asleep anyway. Glad you beat the treason rap at least :)

  61. I am always amazed at people who actually get more awake/alert after coffee.. I can always fall asleep right after drinking one. I always get sleepy the second I get to my boyfriend's place and sit on a couch to watch a movie... he thinks I have something against him but I can't control myself around comfy couches and movies either! I'm sure he would forgive me if I gave him one of these whoopie pies .. well his would have to have peanut butter inside but I love the mint!

I have the same problem falling asleep in certain movies that the rest of the "men" in my family like to watch... they actually do ask me about parts of the movie afterwards, but know that I'll probably not remember anything beyond the beginning and the end!

  67. Don't feel bad. I went to see that movie because I love my husband. Daniel Day Lewis is a good reason to. I did doze off a bit, I have to admit. But these whoopie pies... yeah. They have my name written all over them. The photo is so clear and drew me right in. So want this.

  72. I am torn between laughing--because I too fall asleep at the movies, although I have meds to blame, horror--ok I fall asleep at the movies, but not at Lincoln!!!!, and jealousy, because I want one of those cookies. Like now.
